"Mashed potatoes with a twist!"

Why I Love This Recipe

I love this as I love mashed potato, however most of the ready made stuff is quite calorific. I make a batch, freeze individually and add to meals. I find one is enough, however the recipe said 2.

This is based on a Slimming World Recipe in Free Foods A to Z. I have adapted it a lot to my tastes. It originally had bacon wrapped around it, however I wasn't that fond of it cooked like that, so missed it out. However I have since started adding bacon into it, cut into small pieces. You could also potentially adapt this for different people in your family, so maybe peas for the kids and Jalapeno peppers for the adults.

It is naturally gluten free, however if you are cooking for someone who is very sensitive to gluten, make sure you wash your utensils very well. (I got caught out using a friends colander recently!)

Ingredients You'll Need

1 kg flour potatoes, such as King Edward, peeled and cut into small equal sized chunks
1 leek, thinly sliced
1/2 Savoy cabbage, cored and shredded
low fat cooking spray (or just oil/butter if you aren't watching your weight!
Optional additions - 4 slices bacon, cut into small pieces, peas or Jalapeno peppers.


Cook potatoes in boiling water for 12-15 minutes until tender, drain well and mash. (I use a potato ricer for this because I like my mashed potato very smooth, however up to you!) Set aside and cool.

At the same time, place the leek and cabbage in 2 table spoons water in a small pan, cover and heat for 5 minutes or until tender. Stir occasionally. Drain and cool.

Preheat oven at 200c/fan 180c/gas mark 6.

Mix the leek, cabbage and mashed potato together, season with salt and pepper. Shape into 8 individual patties. (you can make more smaller patties if you like!) You can add other things at this stage, such as Jalapeno Peppers, peas or pieces of bacon, just make sure it is dry.

Spray an oven tray with low fat spray (or grease with oil) Place patties on tray and bake in oven for about 10 minutes or until golden and cooked through

You can freeze these before cooking and then cook from frozen.

Pairs Well With

Wrap in bacon/ham, any vegetables, chicken, eggs, sausages etc
