This is based on a slimming world recipe, so is super healthy as well as delicious. It has quickly become a favourite recipe.
It needs a bit of adaptation to become gluten free as soy sauce, Worcestershire sauce and some cola's contain gluten. However you can buy all of these items in the free from section of larger supermarkets. At the time of writing, Diet Pepsi, Pepsi Max and Diet Cola-Cola were gluten free, however you need to check the labels to be safe as ingredients change and may differ in other countries.

Ingredients You'll Need
Low calorie cooking cooking spray
1 large onion, chopped
1 red pepper, 1 yellow and 1 green pepper, chopped into chunks
2 garlic cloves, crushed
2 tsp gluten free Worcestershire sauce
4 tbsp tomato puree
8 tbsp passata
1 tbsp gluten free soy sauce
1 tsp dried mixed herbs
330ml gluten free diet cola
200ml gluten free chicken stock
200g sugar snap peas (or green beans)
Directions
Heat the low fat spray in a large pan. Add chicken, peppers and onion and stir-fry over a high heat for 5 minutes or until the chicken is lightly browned all over.
Add diet cola, stock, passata, tomato puree, garlic, Worcestershire sauce, soy sauce and dried mixed herbs and stir until mixed
Bring to the boil, cover and simmer for 15 minutes
Add sugar snap peas, stir, increase the heat to medium high and cook for another 15 minutes or until the chicken is cooked and the vegetables tender.
