Why I Love This Recipe

I have a whole pile of recipes that have been typed out over the years and put in a folder and I am currently re-doing these and putting the successful ones on here. Hence I have no idea where this recipe actually came from. I happened to have most of the ingredients for this recipe already or I would have stuck with left overs soup. i really like this one.

Ingredients You'll Need

1 tbsp olive oil
I onion, chopped
1 garlic clove, chopped
1 carrot, chopped
450 g green cabbaqe, shredded
400 g tin tomatoes
1/2 tsp dried thyme
2 bay leaves
1.5 litres gluten free vegetable stock
200 g green lentils
450 ml water
salt and pepper
Fresh coriander leaves or parsley to garnish (optional)


Fry onion, garlic and carrot in oil for 3-4 minutes, add cabbage and cook for 2 minutes

Add tomatoes, thyme, stock and 1 bay leaf. Simmer for 45 minutes

Heat lentils in 450 ml water, with remaining bay leaf, simmer for 25 minutes or until cooked. Drain

Blend onion mixture

Add lentils, season and garnish

Pairs Well With

Gluten free garlic bread, normal crispy baguette if you have non gluten free guests coming as well, just keep it well away from the soup and GF bread
