Gluten Free Mauritian Chicken Curry

I absolutely love this recipe. It tastes decadent and like it has a thousand calories in it, however doesn't.
This was based on a recipe in Slimming Worlds Free Food A-Z, however had fat free fromage frais in it, which I can't find and also if you are freezing portions, you need a little fat or the fromage frais splits. However if you use lower fat cream cheese, it is still quite healthy. This is one of those recipes which needs that little extra fat to make it work.
If you are cooking for someone who is very sensitive to gluten, check the spices as some brands contain gluten. Use any curry powder at the heat level you can cope with.
Ingredients You'll Need
3 garlic cloves, crushed
5cm (1 inch) fresh root ginger, peeled and finely grated
1 small onion, chopped finely
2 tablespoon curry powder
1 teaspoon ground ginger
1 x 400g can of chopped tomatoes
200 ml chicken stock (make sure doesn't contain gluten)
8 skinless, boneless chicken thighs, cut into chunks
1 large butternut squash, peeled, deseeded and cut into small chunks
200 g reduced fat soft cheese
Directions
In a large non-stick pan, sweat the garlic, fresh ginger and onion in 2 tablespoons water for 5 minutes or until onions are soft. (Watch them and add more water if needed)
Add curry powder and ground ginger and cook for 1 minute. Then add chopped tomatoes, stock, chicken and squash. Simmer uncovered for 30 minutes, stirring regularly until sauce has thickened and chicken and squash are cooked.
Allow to cool slightly and stir in the soft cheese. Serve
