"Delicious Low Fat, Filling Recipe"

Serves 4 generous portions | Prep Time 15 minutes | Cook Time 40 minutes

Why I Love This Recipe

I have no idea where i got this recipe from. I typed it out some years ago. i have not made it for years. I love it and remember why I typed it out in the first place. It is lovely and just makes loads,

Ingredients You'll Need

227g gluten free pasta
3 sweet peppers, chopped
2 courgettes, sliced
2 red onions, cut into wedges
Medium aubergine, chopped
Low fat cooking spray
2 x 400 g tins chopped tomatoes
Mixed herbs
1/2 tsp dried chilli's
227 g leaf spinach
300 g low fat yoghurt
28 g grated Parmesan cheese


Preheat oven to 200/400/gas mark 6

Cook pasta as per directions on packet, drain and set aside

Place vegetables in a large deep baking tray, spray with low fat spray and bake for 20 minutes.

Transfer vegetables to large oven proof dish, add tomatoes, herbs and spices. Pile spinach on top. Combine pasta with yogurt and pile on top of spinach and sprinkle with Parmesan. Bake for 20 minutes
