Why I Love This Recipe
This is a weird recipe that shouldn't work. However it does and is delicious. Probably best done when there is a glut of excess Brussels, like boxing day! Raw Brussels taste a bit like cabbage, so this would be a good swop.
Again, based on a slimming world recipe Free Foods A-Z, however with lots of changes.
Ingredients You'll Need
250 g Brussels Sprouts
1 red chilli, deseeded and chopped finely
1 small red onion, thinly sliced
small bag of watercress (and similar salad should work)
2 tablespoons fat-free vinaigrette (check for gluten)
juice of 1 lemon
Cut off stalk ends of sprouts and slice as thinly as you can. Place in bowl with chilli, red onion and watercress.
Peel and remove pith from oranges and cut into segments. Add to the sprout mixture.
Finely grate the zest of 1 orange and mix to vinaigrette. Add lemon juice and drizzle over salad and serve.
