This is an adaptation of a WeightWatchers recipe from "Super Quick and Easy Pasta". i have made many recipes from this book over the years, however it is now falling apart, so needs to be prioritised for uploading. i also have far too much pasta. it doesn't sound nice, however is delicious and full of Omega 3 oils.
One major change i have made is to reduce the portion size. i have adjusted the pasta down accordingly, however not the sauce.
You can use any tins of sardines you like for this really. i used 1 in tomato sauce and 1 in brine and it worked just fine. A great way to use up those surplus tins lurking at the back of your cupboard.
Ingredients You'll Need
175 g dried pasta
2 x 120 g sardines in brine.
250 g cherry tomatoes, chopped in half
juice and zest of 1 lemon
1 red chilli, de-seeded and chopped finely
1 pack fresh basil, chopped
Salt and pepper to taste
Directions
Cook pasta in boiling water for recommended time and drain
At the same time, combine sardines, tomatoes, lemon zest and juice and chilli. Heat in a small pan for 4 minutes. Season to taste
Combine sauce with with pasta, add basil and serve
