Gluten Free Spiced Carrot Soup

I love soups, especially in the winter when it is cold. I freeze soups in 1 meal batches and take to work. This recipe is great, highly adaptable and healthy. It is also free on the slimming world plan at the moment. This recipe was based on a Weight Watchers book (Time to Eat) which is most likely out of print now. I am currently attending a slimming world group, hence why I know this is free, however most recipes can be adapted to be healthy what ever the source.
Ingredients You'll Need
2 teaspoons cumin seeds*
2 teaspoons fennel seeds*
700 g carrots, chopped
300 g potatoes, chopped
2 small onions, chopped
2 garlic cloves, crushed
2 tablespoons tomato puree
1.2 litres gluten free vegetable stock (I use 2 cubes)
Pepper (no need to use salt as it is in the stock cubes)
* ground should work - however omit stage 1
Directions
Toast the spices in a heavy based pan for 2-3 minutes over a medium heat, taking care not to burn them. Remove when you can smell them and move elsewhere
Put all the other ingredients in a large pan, bring to boil. Cover and simmer for 20 minutes or until the vegetables are cooked.
Blend (if you don't have a blender, cut vegetables up finely, however it does taste nicer blended)
Return to pan, add toasted spices and pepper. Reheat if serving immediately.
