This is the latest recipe that I have tried. I used lamb. I also didn't read the recipe and added the rice too early, so the rice is a bit softer than it should be. Tastes fine though and freezes very well.
I took a portion of this to work for lunch this week and it was delicious.
This is another recipe that is in my favourite recipe book "Time to Eat" by weight watchers. I am currently attending a slimming world group and I know plans change regularly, so I can say the recipe is Syn free, however you would have to work out the weight watchers points. I want to be honest about where i get my recipes, so less confident people know that we aren't all ultra creative recipe designers.
Ingredients You'll Need
225 g extra lean minced beef or lamb
1 teaspoon paprika
175 g carrots, diced
1 red pepper, de-seeded and chopped
1 onion, chopped
1 garlic clove, crushed
225 g courgettes, chopped
400 g can of chopped tomatoes
850 ml beef or lamb gluten free stock (made of 2 cubes)
100 g rice (you could break up gluten free spaghetti if you want to be authentic)
Pepper (usually sufficient salt in the stock cubes)
Directions
Dry fry mince until evenly browned. Add in paprika, red pepper, carrots, onion, garlic and courgettes and cook for 2 minutes.
Stir in tomatoes and stock and bring to boil. Cover and simmer for 15 minutes.
Add rice (or gluten free pasta) and pepper to taste. Cook for another 10 minutes until the rice is tender. Serve
