Ingredients You'll Need

6 medium potatoes
2 cups shredded cheddar cheese
1/4 cup butter
2 cups sour cream
1/2 teaspoon parsley
1/3 cup chopped green onions
1 teaspoon salt
1/4 teaspoon white pepper


Cook the potatoes in their skins and then allow them to cool.

Peel and coarsely shred the cooled potatoes.

In a saucepan, combine the shredded cheddar cheese and butter. Stir occasionally over low heat until almost melted.

Remove from heat and blend in the sour cream, chopped green onions, salt, and white pepper.

Add the shredded potatoes to the mixture and stir lightly. Then, turn the mixture into a two-quart casserole dish.

Dot the top of the casserole with butter.

Bake at 350 degrees Fahrenheit for 25 minutes.

For best results, refrigerate the casserole overnight before serving.
