Golden Rice Casserole

Ingredients You'll Need
2 cups white or brown rice, cooked
2 1/2 cups finely grated carrots
1 1/4 cups grated American cheese
2 eggs, well beaten
1/4 cup milk
1 tablespoon grated onion
1 tablespoon melted butter
1 teaspoon salt
1/8 teaspoon pepper
Preheat oven to 325 degrees. Grease a 1 1/2 quart casserole dish.
Combine all ingredients. Toss well, but gently. Place in casserole. Cover and bake 45 minutes.
