Good Beit Cafe Lentil (or Quinoa) Salad

Ingredients You'll Need
Cooked lentils (brown) or quinoa
Veggies chopped up really small: red onions, red peppers, carrots, hot pepper, radish etc. (not tomatoes or cucumbers or anything too mushy)
Chopped herbs: parsley, cilantro and mint
Chopped nuts and/or seeds (almonds, walnuts, sesame, pine nuts, flax etc.)
Dried cranberries
Lemon juice
Olive Oil
Salt/pepper
Directions
1. Cook lentils or quinoa according to package instructions. Let it cool down.
2. Mix together the lentils or quinoa, veggies, herbs, nuts/seeds, cranberries, lemon juice, olive oil, salt and pepper (I like the proportion to be about 1:1 lentils and everything else)
3. Taste and adjust seasoning, and serve with tehina or labane
