Good Pie Trifle

Why I Love This Recipe
When I mentioned this trifle interpretation to the head chef at the Maven, he lessened it to pudding. "Trifles, have sponge cake, jam, and Chantilly." He had a very strict definition of a trifle according to the English tradition. I, on the other hand, believe that a trifle is a loose term that encompasses any layered dessert in a glass dish. It welcomes endless creativity.
I got the inspiration for this trifle from a special pie my mom has made for my brother and I for the holidays every year. Since I can remember, we have requested Cherry Cheese Pie, Good Pie as I liked to call it, or if you asked my aunt, Runny Pie. The filling would never quite set so there was no hope for cutting a neat slice. It looked like goop on a plate, but it tasted heavenly: similar to cheesecake, but sweeter with a silkier texture. Then I discovered the ingredients found new life as a trifle. All of a sudden the unappealing pie was an elegant dessert layered in individual wine glasses, even appropriate to serve at dinner parties . In lieu of cherries, you can use fresh blueberries, strawberries, or anything else you can think of. Let your imagination run wild.
