Quesadillas date back to the 16th century in Mexico as a quick and delicious street food treat combining Spanish and indigenous influences.

2 chicken breasts, cooked and shredded
1 teaspoon chili powder
1/2 teaspoon paprika
1/4 teaspoon cumin powder
Pinch of garlic powder
1/2 cup diced onions, sautéed
1/2 cup diced red bell peppers, sautéed
1 1/2 cups shredded cheese (cheddar and Monterey Jack mix)
8 flour tortillas
2 tablespoons butter, divided
Optional toppings: sour cream, guacamole, and salsa for serving
Directions
In a large mixing bowl, mix chicken, chili powder, paprika, cumin powder, garlic powder, sautéed onions, and sautéed bell peppers until thoroughly combined.
Take a tortilla and sprinkle 1/4 cup cheese on one half, spread about 1/4 cup of the chicken mixture evenly over the cheese, and top with an additional 1/4 cup of cheese. Fold the tortilla in half.
Repeat the process with the remaining tortillas.
Heat 1/2 tablespoon butter in a large skillet over medium heat. Place one folded tortilla in the skillet and cook for 2-3 minutes on each side until the tortilla is golden brown and crispy and the cheese is melted.
Remove from the skillet and keep warm; repeat with the remaining quesadillas, adding more butter as needed.
Slice the cooked quesadillas into triangles and serve warm with optional toppings.
