Why I Love This Recipe
Mother (Tommie Lee Shults Haferkamp) used to make this for us. When Michael was going to school and playing baseball at Collin County Community College (Quad C), I made this to send back to school with him.
Ingredients You'll Need
1 lb. ground beef
1/2 onion, chopped
1/2 green bell pepper, chopped
1 tablespoon vegetable oil
2 cans diced tomatoes
catsup (some recipes call for tomato paste)
chili powder to taste
1 teaspoon garlic powder
black pepper
2 cups large elbow macaroni (cooked)
Directions
1. Brown ground beef and drain off the grease.
2. Sauté onion and bell pepper
3. Add onion, bell pepper, and other ingredients EXCEPT macaroni. Add salt, pepper, garlic powder, chili powder (to taste), catsup to taste (just enough to thicken the sauce, give it color, and reduce the acidity of the tomatoes).
4. Bring to a boil, reduce to simmer, and simmer for at least 30 minutes.
5. Add cooked macaroni.
This is good with saltines or cornbread.
