While I eat low carb and clean most of the time, I still crave a sweet treat every now and then. I try to keep even my treats relatively healthy and my husband, who has a real sweet tooth but is staying low carb to manage cholesterol levels, finds these delicious and satisfying too. Who doesn't love a guilt-free treat?They are delicious and I dare anyone to tell they are grain free!
Ingredients You'll Need
1 cup natural, organic nut butter (almond, peanut, cashew or sunflower butter)
2/3 cup Erythritol or you can use raw, organic sugar; or Lakanto, a natural calorie free sweetener
2 organic, pasture raised or omega-3 eggs
1 tsp. vanilla extract
1 packet of organic Better Stevia
Optional: dark mini chocolate chips (can use dairy free as well)
Directions
Preheat oven to 350 degrees.
Combine first 5 ingredients in a bowl and stir until thoroughly combined.
Stir in chips if including.
I use a small scoop which is about a generous tablespoon. Put the little balls on a cookie sheet lined with either parchment paper or a silicone mat. They don't spread much so you can get 15 out of this recipe all on a large baking sheet.
Bake at 350 degrees for about 12 minutes or until lightly golden brown.
Set baking mat on a cooling rack for about 5 minutes - then remove cookies directly to cooling rack and cool completely.
