Why I Love This Recipe
This Lithuanian dish was a staple at all family gatherings and every day suppers at my Gramma's house. She was first generation immigrant from Lithuania who made her way to the United States and settled in Chicago. She married an American man of Lithuanian decent, had two children (my Dad and my Aunt), divorced, and remarried a first generation Lithuanian man (my Papa). This was our version of comfort food.

Ingredients You'll Need
5 Lb Idaho Potatoes (Idaho potatoes have enough starch to thicken as this bakes. If you use another type of potato, use tapioca, not flour, to thicken. Flour changes the taste and consistency.)
1 Lb Thick Sliced Bacon, Chopped
1 Medium Onion, Chopped Fine
4 Lg Eggs
Pepper to taste
Salt (Optional - May not be needed because of the bacon)
Directions
Grate the potatoes
Fry the bacon and onion with pepper
Beat the eggs
Mix the potatoes, bacon and onion mixture (including the all of the grease), and eggs together
Pour into 9x13 dish
Bake at 350 degrees Farenheit for approximately 1 hour, or until golden brown an a knife comes out clean
Serve with sour cream and apple sauce
