Grandma's Hot Milk Sponge Cake

Why I Love This Recipe
I remember having this as a kid and thinking it was the BEST cake ever. Its actually pretty low in fat and can be substitued with Splenda.
Ingredients You'll Need
2 Eggs
1 Cup Sugar
1 Cup Flour
1 tsp Baking Powder
Pinch Salt
1/2 cup boiling hot milk
1 Tsp butter (add to boiling milk)
1 Tsp vanilla
Directions
Preheat oven 350 degrees
Beat eggs on high for 5 minutes
Add sugar and beat an additional 4 minutes
Sift Flour salt and baking powder.
Mix Flour mix into egg mix
Add hot milk and lastly the vanilla.
Mix and pour into a single layer 8-9" greased cake pan
Bake for 25-35 minutes
The top will spring back to the touch when done, or a toothpick will come out clean.
