Grandma Jean's Applesauce Raisin Cake
Why I Love This Recipe
The aroma of this cake baking brings me back to my childhood. My mother was a great baker, and this was one of her best cakes. Mom used a brown sugar frosting (penuche) on this moist, dense cake.
Ingredients You'll Need
3 cups flour
2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
1 tsp cloves
1/2 tsp nutmeg
1/2 cup shortening
3/4 cup brown sugar
3/4 cup granulated sugar
2 cups applesauce
2 cups raisins
1 cup chopped walnuts
Preheat oven to 325 degrees.
Grease and lightly flour a 9 X 13 inch cake pan.
In a medium bowl, combine flour, soda, salt, baking powder, and spices. Set aside.
In a large bowl, cream shortening and sugars until well creamed.
Add the eggs to creamed mixture, one at a time, beating for about a minute after each egg is added.
Add about one third of the dry ingredients to the batter and mix well. Add about one third of the applesauce and mix. Repeat, alternating dry ingredients and applesauce, mixing after each addition.
Add raisins and nuts and mix to combine.
Turn batter into prepared pan. Bake for about an hour or until done.
Cool on a wire rack. Frost when cool.
