Why I Love This Recipe

Okra is one of the great hot weather plants. They love the heat, so it's plentiful in Texas. When I first started dating my husband, this is one of the first recipes she fixed for dinner. The rest of dinner included chicken fried steak, mashed potatoes and cream gravy, and tossed salad with Miracle Whip dressing. That was 50 years ago!

Ingredients You'll Need

1 lb. fresh okra
2 beaten eggs
1/4 c. buttermilk
1 c. All-purpose flour
1 c. self rising cornmeal
Vegetable oil


Wash and slice okra.

Combine eggs and buttermilk.

Add okra and let stand 10-15 minutes.

Combine flour and cornmeal.

Dredge okra in mixture.

Heat oil to 375 degrees.

Fry okra until golden brown, turning often. They burn easily, so watch closely.

Drain on paper towels.
