Grandpa's Stew

Why I Love This Recipe
My Grandpa’s stew he would make with the string beans grown in his garden.

Ingredients You'll Need
1 ½ tbsp olive oil
16 oz Sweet or Mild Italian Sausage Links
½ medium yellow onion rough chopped
2 large cloves of garlic rough chopped
2 - 28 oz can crushed tomatoes
1 - 28 oz can diced tomatoes
1 - 10 ¾ oz can condensed tomato soup
1 tbsp white sugar
2 Bay leaves
2 tsp dried Italian seasoning
1 tsp dried Oregano
1 tsp dried parsley
16 oz Pepperoni Stick cut into 1/2“ slices
4-5 medium Russet potatoes peeled and diced into ¾” cubes
2.5 lbs fresh string beans (green beans) Cleaned and rinsed
Directions
1. Pour oil in large heavy bottom stock pot over medium heat
2. Cook sausage in pot then remove and set aside
3. Add onions and cook translucent
4. Add garlic cook 1 minute more
5. Add crushed, diced tomatoes, condensed tomato soup, bay leaves, sugar and remaining dried seasoning
6. Mix well
7. Cut sausage into ½” slices
8. Stir in Sausage, Pepperoni, potatoes and string beans
9. Mix well and bring to a simmer
10. Lower heat and cover for three hours or longer
11. Remove and discard Bay leaves
Sprinkle with Parmesan cheese and Serve with buttered Italian bread.
