Granny Great's Rosy Rhubarb Compote
Why I Love This Recipe
My children's great grandma gave me this recipe when I asked for recipes for rhubarb. I had grown a plant and wanted an easy recipe to use. I have not tried freezing yet. Great on ice cream or sweet bisquits.
Ingredients You'll Need
2 lbs. rhubarb
1 1/2 cups sugar
Finely grated zest of 1 large orange
Heat oven to 375 degrees.
Cut rhubarb into 1" pieces and place in an oven-proof dish.
Mix sugar with zest and sprinkle over rhubarb and cover with foil.
Bake 45-60 minutes.
