Granola Energy Bars

Why I Love This Recipe
I learned this recipe while helping my mother-in-law cook for a large group in Belize. The group was down there helping build a school and also held eye and dental clinics. For several days we were cooking for around 100 people and most of the time for about 50. The group was working in temperatures in the 100's plus humidity. We provided this as an energy boost mid afternoon - along with gatorade and water.
Ingredients You'll Need
1 c. kero syurp
1 c. peanut butter
1 c. brown sugar
Mix kero syurp and peanut butter in a heat proof pot until boiling. Stir in sugar until dissolved.
Mix into:
4-5 c. quick oats
1 c. coconut
1 c. mix all (nuts, seeds, chocolate chips, dried fruit, etc.)
Once mixed well, flatten into a 9x13 pan. Cut into bars (~48) - bag in snack bags.

If you don't like coconut you could easily subsitute more mix all. Wheat germ would also be a good thing to add.
