Grape Pie

Ingredients You'll Need
6 c concord grapes
1 1/4 c sugar
4 T tapioca
1 T flour
2 t lemon juice
2 T butter
1/8 t salt
Crust for double-crust 9" pie.
Directions
Make crust for double-crust 9" pie. Remove skin from pulp by pinching grapes until pulp pops out into another pan. Save skin for later. Put pulp with seeds into a saucepan and boil for 2-3 minutes. Pulp is quite juicy, so no extra moisture is needed. Remove saucepan from heat and run pulp through a food mill or sieve to remove seeds. Mix skins with seedless pulp and combine other ingredients except butter. Pour into pastry lined pie plate. Dot with butter. Add top crust and seal edges well. Bake 10 minutes at 425 degrees. Reduce heat to 350 degrees and bake an additional 30 minutes.
