Grapefruit Jicama with Avocado Dressing

Why I Love This Recipe
This is a very simple easy salad to make.
I've included several options if you don't have some ingredients. The avocado dressing is filling, it's all you need.
Ingredients You'll Need
2 cups shredded jicama
1 pink grapefruit cut in chunks
1/4 cup diced red pepper
1 cup shredded spinach
1 ripe avocado
1 tsp maple syrup
Juice of 1 lime
1 tsp hemp hearts
1 tbsp pistachio's
no spinach ? no problem - use whatever greens you have.
no jicama ? no problem - shred up some zucchini or cucumber.
no pistachio's ? no problem - use pumpkin seeds, or pecans.
no grapefruit ? no problem - chop up a tomato.
Toss salad ingredients in a bowl.
Blend dressing ingredients until smooth.
Spoon dressing over salad.
Sprinkle on garnish.
