Greek Lemon Tea Cookies

"A buttery cookie with a sweet lemon filling."

My late Father loved all things lemon, this cookie was a favorite.
Ingredients You'll Need
Cookie:
3/4 c. butter, softened
1/2 c. sugar
1 large egg yolk, room temp
1/2 t. vanilla
2 c. GGFG Baking Mix (or mix of your choice)
2 t. zanthum gum
1/4 c. walnuts, finely chopped
Filling:
3 T
. butter, softened
4 1/2 t. lemon jjuise
3/4 t. orange zest
1 1/2 c. confectioner's sugar
yellow food coloring, if desired
Directions
Cream butter and sugar until light and fluffy; add egg yolk and vanilla. Turn off mixer and add GGFG Baking Mix and zanthum gum, stir until moistened. Turn mixer on and mix well. Shape into 2 logs, 14"x1 1/8"x1 1/8". Wrap in plastic wrap and refrigerate overnight. Next day, unwrap and cut into 1/4" slices. Place on ungreased baking sheets and sprinkle nuts on 1/2 of cookies, pressing lightly into cookies. Bake in an oven preheated to 400 F for 8-minutes, or until cookies are lightly browned around the edges. Remove to wire rack to cool completely. In a small bowl, cream butter, lemon juice, orange zest, and confectioner's sugar until smooth. Tint yellow if desired, place 1 t. on plain cookies, top with nut topped cookies.
