Greek Nachos (AKA Fajita Leftovers)

Ingredients You'll Need
2 cup Fajita Leftovers, Finely Chopped (Onions, Peppers, Jalapenos, Chicken)
3 cup Pita Or Tortilla Chips
1/2 cup Mexican Cheese
Some Feta Cheese For Extra Zing
1/4 cup Kalamata Olives, Chopped
2 Green Onions, Finely Chopped
2 Tbsp Canned Artichokes, Chopped
1 tsp Parmesan
Directions
Oven Temperature: 400°F
*Preheat the oven to 400 degrees for ten minutes while assembling the fajita
*Layer the chips in a shallow baking dish or on a cookie sheet
*Layer the remaining ingredients in this order: cheese, chicken fajita, olives, green onion, and artichokes - sprinkle the top with parmesan cheese
*Bake for 15 minutes or until the cheese is melted and chips are lightly browned
*Enjoy with hummus, sour cream, salsa, and any of your favorite toppings of choice as avocado, chopped cucumber, chopped tomatoes, etc

*You can leave out the olives, or use black ones if you aren't a kalamata fan
