Ingredients You'll Need

• 3 cups cooked quinoa
• 1 cucumber, diced
• 1 tomato, diced
• 1 yellow or orange pepper, diced
• ⅓ cup red onion, diced
• 1 cup Kalamata olives, sliced
• ½ cup crumbled feta cheese
• ½ cup fresh parsley, chopped (optional)
Dressing:
• ¼ cup olive oil
• ¼ cup red wine vinegar
• Juice of half a lemon
• ½ tsp dried dill
• 1 tsp dried oregano
• 1 tsp honey
• ½ tsp salt


Directions

1. Cook the quinoa.
2. Mix all of the diced vegetables and feta.
3. Add the quinoa to the vegetables.
4. Mix the dressing ingredients.
5. Pour the dressing over the vegetables and quinoa.
6. Mix and enjoy!
