Greek Shrimp Saganaki

Ingredients You'll Need
2 Lbs Large Shrimp, Peeled/Deveined
12 Oz. Block Feta Cheese, Broken Into Chunks
1/2 Cup Olive Oil
2 - 16 Oz. Cans Of Diced Fire Roasted Tomatoes
2 Medium Onions, Finely Chopped
1 Green Pepper, Finely Chopped
2 Cloves Garlic, Finely Chopped
1/2 Cup Parsley, Finely Chopped
1 Tbsp. Red Wine
1 Teas. Dried Oregano
1/2 Teas. Paprika
Salt & Pepper To Taste
Directions
Heat the oil in a pot and sautee onions and pepper. Wait until onions start to become translucent and slightly caramelized. Add canned tomatoes, vinegar, salt, and pepper. Let the sauce boil for 3 to 5 minutes. Remove from heat and mix in 1/4 cup parsley.
Put the almost done shrimp in an earthenware or glass baking dish, pour sauce over the shrimp. Sprinkle feta chunks over the top.
Broil on a medium rack on high watching constantly until the feta starts turning golden to medium brown on tops. Between the hot sauce and quick high broil, the shrimp will finish cooking. Take out of the oven and sprinkle with more parsley and serve.
