Greek Turkey Meatballs Bowl

Ingredients You'll Need

1 lb. ground turkey
2 pkgs feta cheese
1 cup chopped fresh spinach leaves
1 egg
1 lemon
1/4 cup chopped fresh parsley
1/2 cup chopped red onion
1 tsp. minced garlic
salt and pepper
oregano
cumin
1 pkg mini cucumbers
1 pkg grape tomatoes
2 pkgs whole grain orzo
Taziki sauce (also see recipe for easy Homemade Taziki sauce)


Directions

1. Preheat oven to 450F.
2. In large bowl combine turkey, 4 oz. feta cheese, spinach, parsley, 1
egg beaten, 1 tsp minced garlic, salt & pepper, oregano, cumin,
lemon juice. Shape into meatballs & place in sprayed down pan.
3. Bake for 25 minutes or until browned!
4. Serve over 1 cup of whole grain orzo with chopped grape
tomatoes, cucumber, feta & tzatziki sauce.

*Can also substitute orzo with riced cauliflower for low carb bowl:
steamable bag of riced cauliflower cooked according to bag, add
salt, pepper, parsley and garlic before adding to bottom of bowl!
