Why I Love This Recipe
Parfaits originated in France and were initially a frozen dessert made from sugar syrup, eggs, and cream. The modern version with yogurt and fruits became popular in the United States in the 20th century.
Ingredients You'll Need
2 cups Greek yogurt (plain or vanilla)
1 cup mixed berries (such as strawberries, blueberries, raspberries)
1/2 cup granola (preferably low in sugar)
1/4 cup mixed nuts (such as almonds, walnuts, pecans), roughly chopped
2 tbsp honey or maple syrup (optional, for added sweetness)
1 tsp vanilla extract (if using plain yogurt)
Fresh mint leaves for garnish (optional)
Directions
If using plain Greek yogurt, mix in the vanilla extract and honey/maple syrup for sweetness, if desired.
Wash the berries and pat them dry.
Roughly chop the mixed nuts.
Take 4 small glasses or dessert bowls.
Start with a spoonful of Greek yogurt at the bottom of each glass.
Add a layer of mixed berries on top of the yogurt.
Sprinkle a layer of granola over the berries.
Add another spoonful of Greek yogurt.
Top with chopped nuts and a few more berries.
Garnish with fresh mint leaves if desired.
Serve immediately or refrigerate for up to a few hours before serving.
Pairs Well With
A refreshing glass of iced green tea complements the light and fresh flavors of the parfait, creating a delightful balance of sweetness and herbal notes.
