Green Chicken Enchiladas

Why I Love This Recipe
This recipe is a little time-consuming but worth the smiles at the dinner table. It feeds the entire family and they love when Mom cooks comfort food for them.
Ingredients You'll Need
12 Tortillas (we like the Flour/Corn Mix made fresh from HEB)
20-30 ounces Green Chile Sauce (505 Southwestern from Costco is really good if you're not in the mood to make your own)
4-5 Chicken Breast
1 Pack Queso Fresco Crumbled Cheese (HEB, again)
Salt and Pepper
9x10 lightly greased oven-safe pan (i.e.: coconut oil, olive oil, butter...)
Boil chicken in water with Salt & Pepper until done. While chicken is cooking, heat the tortillas either using the oven, microwave, or flip them on the stove (I'm not judging how you heat the tortillas, just make sure they are warm or they will tear when folding.)
Remember to preheat your oven to 350 degrees.
Shred chicken breast and season with fajita seasoning. Add chicken and half green chile sauce to a pan and heat through while adding a half cup of crumbled cheese to the mix towards the end.
Take one tortilla at a time, wet it with the chicken/chile sauce mixture on both sides, then scoop two tablespoons of the mixture into the tortilla and roll it up! Place it in the pan. Repeat until all the tortillas are rolled up and in the pan.
If you have leftover chicken/chile sauce mixture, pour it over the enchiladas or make more of them.
Pour the rest of the green chile sauce over enchiladas and top with as much cheese as you like. Place the pan in the oven and let it cook for 25-30 minutes.
