Green Salad with Oranges and GF fried onions

"Green lettuce topped with peas, mandarin oranges, and GF fried onions; topped with a lightly flavored basil dressing, shaved parmesan, and sunflower kernels."

Twenty years ago a good friend, Judy Basolo, brought this salad to a church social. We loved it. This recipe is the adaptation after celiac, and we still love it!
Ingredients You'll Need
For Salad:
1 head green leaf lettuce, torn in pieces
or a bag of salad from the grocery
1/2 bag frozen peas, thawed
1 can mandarin oranges, drained
1/2 can GF fried onions
shaved parmesan
sunflower kernels
For Dressing:
1/4 c. vinegar (white or flavor of choice)
1/4 c. sugar
1/2 c. EVOO
1 clove garlic, minced
1/4 c. fresh basil leaves (more or less to taste)
Directions
Put lettuce in a large bowl. Top with peas, put in fridge to chill until serving. Meanwhile make dressing. Put all ingredients in blender container and blend until creamy. Put in fridge to chill until serving. When ready to serve, top salad with oranges, fried onions, parmesan, and sunflower kernels. Serve dressing on the side.
