Green tea and honey cake

Why I Love This Recipe
Step 1: Prepare the cake. Place the flour, vanilla and baking powder in a bowl, after you have sifted them. Mix the ingredients and set them aside.
Step 2: Put the milk and 80g of honey in a saucepan and let them boil. Remove from the heat, add the green tea and set aside for 10 minutes. Remove the tea and wait for the milk mixture to cool a bit.
Step 3: Place the butter and sugar in the food processor and beat them on high speed for 5-6 minutes, until they become homogeneous, and creamy. Add the eggs one-by-one and keep beating for another 2-3 minutes, until all the ingredients have combined together.
Step 4: Remove the bowl from the food processor and mix in the dry ingredients gradually, while pouring in the lukewarm - by now - milk mixture. Mix gently using a plastic spatula.
Step 5: Empty the cake mixture into a round or rectangular baking pan that you have previously greased and floured. Bake in a preheated oven at 170°C for 40-45 minutes. You will know when it is ready, when you have inserted a scewer into the centre of the cake and it comes out dry and free of cake mixture.
Step 6: Remove from the oven and allow it to cool for 5 minutes. Remove the cake from the cake tin, drizzle with the rest of the honey, sprinkle with almonds and serve.

2 eggs
8.4 fl oz fresh milk
2 sachets green tea
8.4 tbsp honey from Mantinia
2.8 oz flaked almonds (dry-fried)
