Grilled BBQ Potato Skins

Ingredients You'll Need
3 Russet Potatoes, Scrubbed
4 slices Cooked Bacon, Crumbled
2 Tbsp Butter, Melted
1 Garlic Clove, Minced
3/4 cup Shredded Cheddar Cheese
1/2 cup Bbq Sauce, Warm
1/2 lb Pulled Pork (optional)
Sour Cream For Topping
2 Tbsp Snipped Chives For Garnish
Directions
Oven Temperature: 350°F
*Preheat oven; bake potatoes on middle rack until fork tender, about 1 hour; remove from oven and let sit until cool enough to handle
*Bake 4 strips of bacon on small sheet pan in the oven for 15 minutes; crumble bacon when it has cooled
*Preheat grill to medium heat; cut potatoes in half, lengthwise, and spoon out the flesh, leaving a half inch shell
*Melt the butter in a saucepan and add minced garlic; brush potatoes with the butter and garlic mixture
*Flip over and butter the bottoms; place potatoes on grill and cook until crisp, about 4 to 4 1/2 minutes on each side and remove from grill
*Divide the cheese, bbq sauce (and pulled pork, if using) among the potatoes; top potato skins with sour cream (optional), crumbled bacon, and chives for garnish
Recipe Tips:
*Variation for simple potato skins: after you scoop the potato out, brush with melted butter and place skin up on baking sheet; brush skins with butter and sprinkle with garlic salt; broil in oven until browned and butter bubbly; flip over and broil until golden brown; add cheese and cheese will melt while cooling down to eat/serve – SUPER great served with Habanero Sour Cream
