Grilled Mini Sweet Peppers & Onion Delight

Why I Love This Recipe

Did you know that mini sweet peppers are not only delicious but also packed with vitamins A and C, making them nutritious as well as tasty?


Ingredients You'll Need

20 mini sweet peppers
1 tablespoon olive oil
1 tablespoon chili onion crunch (oil)
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 teaspoon smoked paprika
1 large sweet onion, sliced into thick rings
1 tablespoon chopped fresh parsley (optional)


Directions

1. Preheat your grill using medium heat. Place a cast iron grill on the grates, and let it heat up for about 10 minutes.


2. While preheating, rinse the mini sweet peppers under cold water, slice them in half lengthwise, and pat them dry with a clean kitchen towel.


3. In a mixing bowl, combine the mini peppers with 1 tablespoon of olive oil, 1 tablespoon of chili onion crunch oil, kosher salt, black pepper, and smoked paprika. Toss until evenly coated.


4. Separately, coat the thick rings of sweet onion with the same olive and chili onion crunch oil blend.


5. Place the sweet peppers and the onion rings on the cast iron grill in separate areas. Grill the peppers for about 5-6 minutes on each side, turning carefully with tongs, until the skin is lightly charred and the peppers are tender to the touch. The onions may take slightly longer, about 6-7 minutes per side, until grill marks appear and the onions are tender.


6. Once grilled, remove both the peppers and onions from the grill, and allow them to cool slightly. Sprinkle with chopped fresh parsley, if desired.


7. Serve warm as a delightful snack, side dish, or sandwich and salad topping. The sweet onions and peppers pair beautifully together!
