Ingredients You'll Need
450 g shrimp, peeled
1 handful basil leaves
2 tbsp extra virgin olive oil
1 clove garlic, peeled and minced
lemon juice from a 1/4 lemon
1 tbsp toasted pine nuts
2 tbsp grated Parmesan
salt and pepper
Directions
Whizz together the garlic, olive oil, Parmesan, pine nuts, basil, lemon juice and the salt and pepper in a blender. This will give you a lovely smooth and rich pesto.
Rub the pesto on the shrimp and keep it marinating for at least 30 minutes in the fridge, or overnight if you are making it ahead of time. It's best to leave the marinate in a glass or ceramic bowl, don't use plastic boxes for this.
Carefully skewer the pesto shrimp. Grill them on medium heat for 2 or 3 minutes on each side, or until cooked, with a rosy, slightly crispy on the outside.
