Grilled Shrimp In Pesto

Why I Love This Recipe

Believe me, when I say this is a divine explosion of the senses. Every seafood lover will appreciate this simple, yet super tasty shrimp recipe. On top of being an absolutely mouthwatering appetiser, these grilled shrimp are also healthy and pose no danger to your diet. It doesn't take much time either, so it is a nice treat for a workweek dinner. It's also ideal for a fun garden and BBQ get-together. Personally, I love this recipe in cases when I need to whip up a quick but impressive meal for dinner with friends, or unexpected guests. Ingredients You'll Need

450 g shrimp, peeled
1 handful basil leaves
2 tbsp extra virgin olive oil
1 clove garlic, peeled and minced
lemon juice from a 1/4 lemon
1 tbsp toasted pine nuts
2 tbsp grated Parmesan
salt and pepper


Whizz together the garlic, olive oil, Parmesan, pine nuts, basil, lemon juice and the salt and pepper in a blender. This will give you a lovely smooth and rich pesto.

Rub the pesto on the shrimp and keep it marinating for at least 30 minutes in the fridge, or overnight if you are making it ahead of time. It's best to leave the marinate in a glass or ceramic bowl, don't use plastic boxes for this.

Carefully skewer the pesto shrimp. Grill them on medium heat for 2 or 3 minutes on each side, or until cooked, with a rosy, slightly crispy on the outside.
