Guatemalan Banana Bread Golden Baked French Toast

Ingredients You'll Need
1 whole wheat English muffin, split, toasted
2 slices ripe tomato
8 ounces spinach, cooked
2 hard-boiled eggs, sliced
2 tablespoons mayonnaise
Salt free seasoning, sprinkle
2 basil leaves, shredded
Preheat oven to 350° F. In a large bowl, combine flour, baking powder & salt. Stir in bananas, coconut milk, vanilla & butter. Fold in raisins & cashews, if desired. Pour into a greased 5" x 9" loaf pan. Bake at 350° F for 1 hour & 15 minutes or until tested done.
Layer bread in the bottom of a greased 13" x 9” baking pan; set aside. Combine milk, cream cheese, eggs, cinnamon, nutmeg, and orange extract in a blender; blend well. Pour evenly over bread; cover with aluminum foil and refrigerate overnight.
Preheat oven to 350° F. Uncover and bake at 350° F until golden, about 35 minutes; sprinkle with brown sugar. Drizzle with
maple syrup before serving.
