HAWAIIAN SWEET AND SOUR MEATLOAF MICHELLE LOSEYS STYLE

"Sweet and sour Hawaiian meatloaf yummm"

I used one of my grandmothers sweet and sour sauces on top of my Hawaiian meat mix
Ingredients You'll Need
Meat mix:
3 Lbs ground beef
1/2 can crushed pineapple in heavy syrup strained reserving juice for sauce
1/4 - 1/2 small bag of frozen tri colored peppers and onions chopped up small
garlic powder
salt and pepper
Opt: parsley
Opt: Lawry's seasoning salt couple shakes not much
Regular seasoned bread crumbs (not Italian seasoned)
Sauce:
1 can Pineapple chunks or tidbits
juice from both cans of pineapple
1 red bell pepper cut in 1/2 then sliced
1 green bell pepper cut in 1/2 then sliced
(instead of peppers can use 1/2 -3/4 bag of frozen tri color peppers and onions)
1 - 10 ounce jar maraschino cherries strained
about 1/2 cup light brown sugar
about 1/2 cup Apple cider vinegar
Opt: a lil fresh ginger grated (my grandmother added this but I never did)
1/4 cup cornstarch
Directions
Meat mix: Mix all ingredients together put in baking pan in meatloaf shape add a lil water cover and bake 350F about 45 mins- 1 hr remove cover and add sauce.
Sauce: Put juice of both pineapple cans in 2 C measuring cup if needed add water to get to 2 C mark add to sauce pan add pineapple, brown sugar, vinegar and cornstarch. Heat and stir till heated through and thickened. Take off heat add peppers and cherries and pour over meatloaf
Return to oven and cook 'till done no pink inside of meatloaf!
