Ingredients You'll Need

4-6 russet potatoes, peeled and thinly sliced
2-3 large onions, peeled and thinly sliced
1 c. shredded sharp cheddar cheese
3 T. bacon fat
salt and pepper to taste


Directions

Melt bacon fat in a heavy iron skillet over medium heat. Arrange potatoes in overlapping circle in skillet, top with onion slices, then cheese; finish with another later of potatoes on top, seasoning each layer as you go. Cover skillet and cook until potatoes are browned on bottom. Using a plate, turn potatoes onto plate, then flip them over so uncooked side is on the bottom of the skillet and cook until browned and potatoes are tender. Flip onto serving plate and cut into wedges to serve.
