Halibut Poached in Sake

Ingredients You'll Need
4 Thick halibut steaks
¾ cup sake
2 Fennel bulbs thickly sliced
1 tblsp sesame oil
Fresh Ginger, finely grated
Green onions sliced thin
Salt and pepper to taste
Directions
Coat a braiser or a large frying pan with sesame oil. Season the pan with salt and pepper. Arrange the rounds of the sliced fennel in a single layer in the pan. Place the halibut slices on top of the fennel. Rub the fresh ginger on each steak and sprinkle the top of each piece with sliced green onion. Pour the sake into the pan. The amount of sake you will need will depend on the size pan you use. The liquid should cover the fennel and be just touching the fish. Cook on the stove top over medium high heat until desired doneness.
