Why I Love This Recipe

The eerie moaning heard on dark Halloween night may not always come from ghosts. All too often, it is groans from miniature goblins and princesses who have indulged in too much candy on empty tummies. As a registered dietitian who has brought up two active boys, I suggest enticing them with a horribly gruesome sounding menu - recipes gory enough to suit any goblin, yet secretly packed with nutrition, before sending them off into the night.


Ingredients You'll Need

2 tablespoons butter
¾ cup finely chopped mushrooms (about ¼ cup)
2 pounds hamburger
1/3 cup finely chopped onion
¼ cup finely chopped parsley
1 cup grated low-fat Swiss or cheddar cheese
½ cup milk
1 egg
½ teaspoon salt
½ teaspoons pepper


Directions

Preheat oven to 350 degrees. Melt 2 tablespoons butter in small skillet, add mushrooms and cook over moderate heat, stirring frequently about 5-6 minutes until lightly colored. Combine with rest of ingredients and place on a cookie sheet coated with cooking spray, or lined with parchment paper.


For Halloween: Shape into a round “head” before baking. Make deep indentations for eyes and mouth, shape a lumpy nose. Bake 45-50 minutes.


After baking, use sliced hard boiled eggs for eyes, tomato slices for bloody lips, carrot “fangs,” broccoli or cauliflower ears.
