Ham and Cheese Macaroni Casserole

Why I Love This Recipe

This is one of the handful of recipes I copied from my mom's recipe box when I left home for college. It's always been a favorite!

You can change it to make it "mexican" by using a tad of cumin and mexican blend cheeses. Or you could make it "italian" by using a sprinkle or two of dried oregano and italian blend cheeses.

Ingredients You'll Need

1/3 cup onion, chopped
1 cup good quality ham, chopped
1 red bell pepper, chopped
2-3 cups cooked macaroni
2 tablespoons butter
1 tablespoon flour
1 teaspoon salt
1/2 teaspoon mustard powder
1/4 teaspoon nutmeg
1 cup grated cheese
1 1/2 cups of milk
more grated cheese for topping casserole


Sauté in olive oil the chopped onion, pepper and ham in a pan until soft and set aside.

Put the butter in the bottom of a saucepan on medium heat and melt. To the melted butter add the flour, salt, mustard powder and nutmeg and stir constantly until bubbly. To this mixture whisk in the milk until well combined. Stir over heat until hot and add the cheese. Once cheese is melted and incorporated, turn off the heat.

Combine macaroni, sautéed veggies and ham, and the cheese sauce in a 2 quart casserole dish. Top with grated cheese. Broil in the oven until the cheese is bubbly and starting to brown.


Pairs Well With

This is great with a side salad.
