Hamburger Buns using Grandmas GF Bread Mix

We had been buying hamburger buns at the grocery, although my grandson, David didn't like them terribly well. I was having a problem with my bread recipe tending to overflow the pan and mess up the oven, so I tried taking some batter out and putting it into 2 ramekins. Success! So now we get the bonus of 2 hamburger buns with each loaf of bread, or sometimes I just make a recipe of buns. David loves them, no more grocery store buns!
Ingredients You'll Need
1 1/2 c. milk
1/4 c. olive oil (or oil of choice)
4 eggs
1 package Grandmas GF Bread Mix
Directions
Heat milk in microwave for 2 minutes on high. Meanwhile using either a stand mixer or a hand mixer, add heated milk and oil, start beating on low speed. Add eggs, continue beating. Turn off mixer and stir in Grandmas GF Bread Mix by hand until moistened, turn mixer back on and beat for 1 minute on medium speed. Heavily grease the sides and line the bottoms with parchment paper or wax paper of ten 4" ramekins. Pour batter into prepared pans and let raise for approximately 1 hour or until doubled. Bake in an oven preheated to 350 F for 30 minutes. Cool in pans for 5 minutes, then turn out to cool on wire rack until completely cool. Since there are no preservatives in these buns, keep out only what you will use within a day or so and freeze the remainder to use as needed.
