1 Tbsp. olive oil
1 lb. lean ground beef
1/2 tsp. salt
1/2 tsp. garlic powder
3 Tbsp. flour
1 cup milk
1 cup salsa
3 cups (about 3/4 of a pound) shredded cheddar cheese
Directions
1. In a medium saucepan, heat the olive oil over medium-high heat.
2. Add the ground beef, salt, and garlic powder.
3. Cook stirring occasionally until cooked through, 7-8 minutes. Remove from heat.
4. Stir in the flour really well. Slowly stir in the milk, then stir in the salsa.
5. Put the saucepan over medium heat, stirring often until bubbling. Remove from heat.
6. Add the cheddar 1 cup at a time, stirring well after each addition until it’s melted in.
7. Serve immediately. Or cover and refrigerate and reheat when you’re ready.
