Ingredients You'll Need
1 lb flank steak
2 tbsp olive oil, divided
1 tbsp lime juice
1 tsp chili powder
1 tsp cumin
½ tsp smoked paprika
½ tsp garlic powder
Salt & pepper to taste
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 onion, sliced
8 small flour tortillas
1 cup guacamole
½ cup sour cream
½ cup pico de gallo
1 cup shredded cheddar
2 tbsp cilantro, chopped
Lime wedges for serving
Directions
In a bowl, combine 1 tbsp olive oil, lime juice, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper to create a marinade.
Coat the flank steak with the marinade and let it sit for 20 minutes.
Heat 1 tbsp olive oil in a skillet over medium-high heat. Sauté the bell peppers and onion until softened, 5–7 minutes. Remove and keep warm.
In the same skillet, cook the marinated steak for 4–5 minutes per side for medium-rare. Let the steak rest for 5 minutes before slicing thinly against the grain.
Meanwhile, warm the flour tortillas in a dry skillet for 30 seconds on each side.
Assemble each fajita by placing the sliced steak and sautéed veggies on a warm tortilla. Add guacamole, sour cream, pico de gallo, and shredded cheddar as desired.
Garnish with chopped cilantro and serve with lime wedges.
