Why I Love This Recipe

We LOVE salmon, and the way this is prepared, it's got all the vegetables in the recipe, so all you need is pasta potatoes or rice on the side. Delicious, easy and healthy!

Ingredients You'll Need

Preheat oven to 350 degrees
Eight 3 inch wide strips of salmon steak
1-2 Tablespoons Olive Oil
1/2 cup of Kalamata Olives, chopped
10 Peppadew Peppers (Delicious, hot, sweet and great flavor)
5 cloves Garlic chopped finely
10 Cherry tomatoes cut in half
2 cups of dry White Wine
Salt & Pepper to taste
Truffle Salt (1/4 tsp)


Season the fish with the Salt/Pepper and truffle salt.

Heat the pan, add olive oil on high heat

Sear the salmon on high heat in black cast iron skillet, skin side down, for 10 minutes, remove.

Add garlic, quickly sauté, then add in Olives, peppers and tomatoes

Saute for a few minutes

Add wine and reduce (cook about 10 minutes).

Put Salmon back in the cast iron pan and spoon juices and olive mixture over each steak.

Place in oven at 350 for about 15 minutes, covered with alum foil. Remove the foil and cook for another 10 minutes (you can also put under broiler quickly at the very end if you like).
