Ingredients You'll Need

6 cups mixed greens (like spinach, arugula, and baby kale)
1 cup cubed roasted butternut squash
1/2 cup dried cranberries
1/4 cup crumbled feta cheese
1/4 cup chopped pecans
1/2 cup pomegranate seeds
3 tablespoons olive oil
1 tablespoon maple syrup
1 tablespoon apple cider vinegar
1 teaspoon Dijon mustard
Salt and pepper to taste


Directions

Prepare the maple vinaigrette by combining olive oil, maple syrup, apple cider vinegar, Dijon mustard, salt, and pepper in a small jar. Shake well until emulsified.
Toss together mixed greens, roasted butternut squash, dried cranberries, feta cheese, pecans, and pomegranate seeds in a large bowl.
Pour the vinaigrette over the salad and gently toss to coat.
Ensure ingredients are evenly distributed and serve immediately.


Pairs Well With

Pairs excellently with a crisp Chardonnay or a sparkling apple cider.
