Hasselback Chicken with Apricot, Bacon, and Brie

Hasselback Chicken is a fun, easy dish to make. This is a terfific flavor combination that would make a lovely Sunday dinner.
Ingredients You'll Need
4-6 chicken breasts, cut slices from top of chicken to bottom, taking care to not cut through, about 1/2" apart across top of chicken breast to create

EVOO
12 oz. Brie cheese, slivered
10 oz. apricot preserves
4-6 slices of bacon, chopped and cooked until nearly crisp
1/2 c. balsamic vinegar, reduced
Directions
Place the chicken breasts which you have cut into Hasselback chicken on a parchment lined baking sheet. Place slivers of Brie cheese in the cuts across each chicken breast. Put in an oven preheated to 375F for 30 minutes, top chicken with apricot preserves and sprinkle with bacon bits, return to oven to cook for another 10-15 minutes or until chicken registers 165F on an instant thermometer. Meanwhile make balsamic reduction. Place balsamic vinegar in a small bowl and microwave on high for 1 minute. Stir, repeat until balsamic comes to a boil. Continue cooking in 30 seconds increments, stirring well until vinegar is reduced and thickened. Drizzle over chicken and serve immediately.
