Hasselback Potatoes with Herbed Butter

Hasselback potatoes are a family favorite because they are already seasoned and ready to enjoy.
Ingredients You'll Need
A large baking potato per person, peeled
For the compound herb butter:
1 stick butter, softened
1 c. fresh herbs of your choice, my favs are basil, thyme, rosemary, sage, and parsley
freshly ground sea salt and freshly ground pepper to taste
Parmesan, grated (optional)
Directions
Put potato in front of a cutting board; with a very sharp knife cut across the top of the potato half an inch apart and cut the slice down to the cutting board, but not through the potato. When done, you can put potatoes in a bowl of cool water to keep until you are ready to proceed. Dry them off before proceeding. Wash the fresh herbs and use only the leafy, tender parts. Chop them very finely and mix them well with the softened butter. Add salt and pepper to taste. I also often add some grated parmesan. Mix well. Using a knife spread some of the herb butter between each slice of the potato, gently. Bake potatoes in an oven preheated to 425F for 45 minutes to an hour or until potatoes are tender. Serve immediately or wrap in foil until serving time to keep warm.
